3rd Nov 2019 – What a fab day!

Evening all, hope you are all well, and have had a lovely weekend 🙂

Today has been yet another lovely day, Amy and I have had an exhausting but great mum and daughter day again today 🙂

To start off we had a healthy sausage bap for breakfast

Then we went off to the woods to have a nice amble and collect chestnuts.

Background here, I used to take Amy to these woods when she was just a little girl, we used to play hide and seek, have picnics (sarnies and crisps), pick blackberries, pick apples and collect chestnuts. We used to walk for ages, me showing Amy ferns unfurling in spring and turning brown in Autumn, pointing out mushrooms, Amy getting excited seeing all the squirrels running around.

They were lovely afternoons. It was beautiful revisiting a little piece of our past 🙂

Then we went shopping for all my salad stuff and fruits and nuts for Amy, as she would like to have healthier snack options. Together we then prepped several days worth of fruit and nuts for her and all mine and Paul’s daytime foods for the week.

Amy also got some porridge, which she has never prepared before, so she spent a few minutes making a porridge which we shared. To sweeten it, we added honey.

After that we made the recipe up for my Cheap & Nutritional blog posts, which was more timely than I anticipated as we needed to notate everything we were doing. We had a very healthy 2% fat turkey mince spag bol, and it was a lot more flavoursome than last weeks experiment, in fact we were very pleased with how it tasted and the quantity. This has now been loaded up as my first recipe 🙂

We tried and failed to make butternut squash crisps – they were either soggy or burnt OR BOTH 😀

And while I wrote up my recipe blog post, Amy prepared and roasted the chestnuts, which tasted GREAT!!!

I still have washing to do, and a kitchen to clean up – BOOOOO!

And as it’s 9.45pm, I’m thinking it’s going to be bed time way too soon.

I have so loved this weekend, it has been lovely doing lots of non stressful things, in my own time, and spending some wonderful time with my beautiful little girl 🙂
