Oh dear, I really do have to get used to this blogging thing! it’s been a few days, but i’m back!
The weekend was a little manic – so I didn’t get a chance to go to Boots and get a print out, however I weighed myself on my scales yesterday morning and I weight 16stone 10.8 lbs, that at least gives me a number for now.
We had monsters over the weekend so was a little tough, though I was so pleased with the family lunch i’d put on, because fussy monster helped to prepare it, ate some of it… AND CAME BACK FOR SECONDS! no pics of it i’m afraid as i need to get into the habit of remembering to take the pics.
Saturday – breakfast – a cup of tea – this is really not a good start, gutted with myself, but i just needed to start my day with peace and quiet before mayhem ensued! For lunch we took newly collected monsters to a cafe, fussy monster likes the type of food they do. I had an omelette with cheese and mushroom, chips and peas, but I only ate half the chips and all the peas, so don’t feel too bad about that. Oh, and diet coke, not full fat :). Sunday evening, we played games, we did have some crisps and processed nuts, but not many, and pepsi max, no alcohol, so some good choices, and some better options.
Sunday – finished off monsters’ cocopops, so would have been about one of those little boxes in total. I always have full fat milk, I know there’s probably more calcium added into semi and skimmed now, but I just don’t like the idea of reduced fat dairy, in any format! i mean, have you tried the reduced fat cheese?!?! – mind you, having said that, i do use reduced fat cheddar in some of my cooking and it’s perfectly fine!
Now for lunch, i got older monster to help me prepare salads and pastas – she apparently doesn’t like anything other than processed foods, so nuggets, chips, that type of thing, but we did a greek salad
- 8ish small tomatoes halved
- one pepper chunked
- one red onion finely sliced
- one pack feta cheese cubed
- 15ish green olived halved
- half cucumber chunked
- drizzle olive oil
- 1 tbsp dried oregano
- mix together – YUM!!
It’s such a pretty looking salad – i love it! my mum-in-law has asked for the recipe and took the remaining salad home.
Then a leafy salad
- handful rocket
- handful spinach
- 8ish small tomatoes halved
- half cucumber thinly sliced and quartered
- one tin drained and rinsed five bean salad – Napolina is the tastiest brand
- glug honey mustard healthy dressing
- sprinkling of dried Thyme (monster wanted that added)
Pasta
- brown pasta
- lighter than light mayo
- thick ham cubed
- pineapple cubes
- frozen sweetcorn – cooked
- mixed all together
- served cold
Rice
- brown rice cooked in water with a beef stock cube
- frozen peas – cooked
- polish sausage cut into small cubes
- mixed together
- served cold
Rice and salad dishes would be just as nice hot π
Potato salad – very basic
- salad potatoes cut in half and roughly same size
- in cold water, brought to boil and simmered for approx 12 mins
- drained and left to cool
- mixed with lighter than light mayo
Chicken fillets
- chicken fillets in deep roasting tin
- dried herbs – i used sage and oregano – sprinkled over
- chicken stock – 1 per 200 ml of boiling water – i needed 600 ml
- pour over chicken – preferably covered – don’t worry if not covered
- cover with foil
- 160 degs celcius preheated fan oven
- pop in oven for about half hour
- carefully cut biggest one in half, if nice and white whole way through it’s cooked, if not recover and pop back in oven for another 10 mins
- left overs great to add to salads and pastas!
- will keep for 3 days in fridge or can freeze if surplus
Gammon joint
- cooked as per instruction – and yes there was crackling!
- if being good – trim of the crackling/fat – which i did – mostly!
So, yes i was on the whole good, and yes my in-law family all ate plenty, and for a processed food family, the food went down well!
Now, i can’t blow my trumpet too much, the family did not eat all the pringles, and well, i LOVE crisps of any description, so i allowed my significant other to have a few, obviously I hogged the majority! Now here’s the weird thing, bowels – the following morning – movement was very, very difficult, and this is something I have noticed in the last few months if, no when, I’ve pigged out on crisps! it’s like (and i’m so sorry, but I promised myself honesty) chocolate sandwich spread, in colour and consistency. Doesn’t happen if I don’t pig out on them. Maybe I need to learn moderation with my fave snack π¦
So that was Sunday, now for Monday!
Breakfast – a bunch of grapes – about 20, a small pot (aprox 25g) mixed natural nuts, Left over greek salad with chicken torn up and added. only one cup of tea at work as still no half spoon sugar so was on full fat sugar, pepsi max.
Dinner – now, normally my other half does the shopping after work and I visit with my mum, by the time we get back we’re knackered, and really don’t want to do a lot of prep etc, so we normally have a pizza. Yesterday, I seriously disappointed both of us by telling him we’re having salmon – a staple on a different day usually, but as it’s so easy and quick, I knew i couldn’t really cheat.
One salmon fillet each – added to one hot frying pan that’s been sprayed a couple of times with 1cal spray. Heat turned down to half, then cooked with lid on skin side down for 7 minutes, wiggled once or twice to stop sticking, turned over and cooked for another 7 minutes – BOOM!
One packet of two minute rice – i get Uncle Ben’s which is cooked with a bit of water
big handful of frozen peas and sweetcorn, added to boiling water and cooked for a couple of minutes, then drained and added to rice.
Plate up and enjoy! dinner with very little prep, healthy, tasty and filling!
Supper – healthier choice chocolate mousse pot – scrummy
Water – uhum – none! but another can of pepsi max, so still not full fat and no sugar from tea.
Today – Tuesday – my normal daily routine
- 2 hard boiled eggs
- 25ish grams of natural nuts
- 1 banana
- left over salad – enough for a big bowl
- half a chicken fillet torn up into it
- one pack of cathedral bites – this is to stop the munchies in the afternoon – there’s 115 calories in a pack, but they are very tasty.
- tonight it’s girl’s night round my mums, so mum will be cooking – no idea what, so i’ll let you know tomorrow
Water – i have a glass in front of my right now – and I have actually had some! Though I am getting to that point where i’ll need to run to the loo – it seems the older i get the more often i need to go – so frustrating!
