29th July 2019 – hmmmm

MOTIVATIONAL QUOTE: Only I can change my life, no one can do it for me.

Weight gain – 2.2lb

This weekend was lovely for friend time, I had my friend’s lad over for a cooking lesson, he wanted to know how to make a pie from scratch, which he now knows.

It seemed a good idea to invite his parents over for the evening so we could all share in his pie making success, which meant full on dinner.

Had I stopped at that point I may have had a good week, however, my friend and I then sunk a large bottle of Bailey’s and had loads of bad nibbles.

Sunday was then a wash out, ending with us getting a takeaway last night.

Today has been half-hearted, I’m wondering if I can be bothered, I’m definitely in a self pitying slump.

So, in an effort to sort myself out I’m going to get up early tomorrow and do exercises.. I hope!

26th July 2019 – WOOHOO! Love liver!

I love liver, I’ve always over cooked it, so it’s always been a bit on the dry side, but there are a couple of recipes we’ve found which means we really look forward to it.

And the great thing about liver is it’s chocka block full of loads of vitamins and minerals, and is a lean meat. Most important to my way of thinking is the huge dose of iron we get from it! Very important for women, especially younger women. Not so important when you get to my age and you are apparently not so young anymore!

Though for a word of warning, liver is not to be eaten when pregnant (not sure about breast feeding ladies).

Oh, and it’s cheap!

And it’s great to know that’s a bit of an animal not wasted.

I think liver should be brought back into fashion.

So today’s dinner was cooked by my significant other, amazingly tasty and filling.

Lots of little steps to do, but it really isn’t a hard recipe to follow. my love’s tips are, chop liver quite small, don’t put salt in flour, do prep work before you start cooking.

26th July 2019 – who says you can’t eat out?

I have just been out to lunch for my Friday meet up with Mum. I always wonder whether if i have the discipline to eat healthy, or will i go for bangers and mash, or maybe deep fried fish and chips! can i stay away from the sugar laden refillable fizzy?

Yes, I do have self discipline!!

I had a self serve salad bowl to start – rice, pasta, pineapple, raisins and sweetcorn, a small scoop of reduced fat vinegarette and just a little bit of crispy bacon bits. I continued with my thinking about food, and only had half of my bowl (so will know for next time not to put so much in).

Then I had a nice salad with chicken – and I do mean it was nice, not too much dressing, and it wasn’t cold! I did eat all of that though.

As for fizzy – i had one glass of diet fizzy, which i shared with a wasp πŸ˜€

I will be having dinner later, but that should be the nice healthy liver – excellent for iron and lovely with the recipes we follow, will post more on that later.

So, back to work for me…. Only 3.5 hours to go!

25th July 2019 – liver you say!?!?!

We decided in this clammy heat not to bother cooking liver tonight, it’s way too hot to be hanging over a cooker, so we had our fish and chips today instead. It might not be the healthiest of dinners, but it’s lightly dusted fish and oven cooked chips (with a bit of butter), so a lot healthier than the chippy πŸ™‚

And how proud I am of myself! I knew when I had eaten enough and I stopped!!! I’m getting quite good at this, though I don’t mind sharing with you, I almost cried as I cleared the plates… those chips are gorgeous!

And as it’s soooo hot, the exercises will have to wait until tomorrow!

24th July 2019

I confess! I wasn’t going to put an update on for yesterday as I had not been as good as I should have been with dinner, but then I got to thinking, this is my diary, warts and all, so yes, I have a duty to myself to record honestly (which is what I had promised myself when I started).

During the day I had my usual daytime food – other than a banana, which the significant other did not pick up in the shopping, another item apparently not on the list πŸ˜€

I was pleased with yesterday, even staying away from the tempting cheddar bites, even though they are specifically for my afternoon munches, and supposed to be without guilt.

But then My daughter and her other half joined us for dinner, and my thoughts of a healthy spag bol went out the window. The spag bol was ok, i used 5% fat mince, added loads onion, mushrooms and peppers, used 1cal spray and had brown pasta, but then I saw the cheesy garlic bread, and then my other half suggested he do some croutons – Well, you just have to taste these to understand – they are, quite literally, irresistible!

Had I shown a bit of will power yesterday would have been a good day, as it is, it was a nearly good day!

Today will be a good day, the other is cooking liver tonight, can’t wait!

Fresh, Frozen or Tinned Veggies

What veggies are best – fresh, frozen or tinned?

I always feel good when I’ve prepared my vegetables for dinner, It’s healthy, fresh food – what’s not to love?

Well, here’s the thing – veggies are a living organism, or were, and from the second they’ve been picked they begin to lose all their nutrients – of course they still look lovely, but when they start turning, and eventually going squelchy, that’s coming to the end of a process which has been going on since the veggie was picked. 

This means of course that we’re missing out on all those nutrients we happily think we’re getting, as if we had picked and cooked straight from our garden (not an option for me – I can’t even keep a cactus!).  We could of course buy daily, if we have such a thing as spare time, but we don’t actually know how long the shop has had the produce before we go round squeezing and prodding and sticking it in our trolleys, so actually the veggies could be a good few days old already – that’s several days of nutrients we could be missing out on!

There is an excellent compromise – frozen veggies!  I buy veggies where I’m told they are frozen within hours of picking – that means those veggies have only lost a couple of hours of nutrients, before the remaining nutrients are locked in, ready to be cooked and gobbled up.  So in effect, with frozen veggies, you are eating vegetables which were picked only a couple of hours ago, no matter how long they’ve been escaping you in the freezer πŸ™‚

I know, I know, they lose some of their texture and their taste when they’re frozen, especially if you’ve had them for a β€œlittle” while in the bottom of the freezer, but here’s the thing, they are still nutritionally better for you than the fresh veggies you bought over the weekend.  But, if we store them and cook them according to the packet instructions, this will help.

And if you’re anything like me when I’m not being as diligent with my shopping and using, buying frozen could help stop the wasted food – the food we throw away because it has begun to turn – think of the pennies we could all be saving!

And tins?  – now I’m not sure if tinned veggies are preserved as quickly as frozen veggies, but they do also hold onto their nutritional value from the moment they’re preserved – so perfect for quick dinner preps, again no food wasted – follow the cooking guidelines as this has been the way the manufacturer has found their food tastes best.  The only thing you might want to check out is the ingredients used for the preserving, so the tins may have higher salt for instance than you would like. And even better a can of veggies will apparently taste the same now as in 100 years – apparently! and still have the same nutritional value – providing the tin hasn’t been damaged in any way.

So, all in all, we really should not feel at all guilty about eating frozen and tinned veggies.  And if you’re like me, and you love your fresh veggies – that’s all good too, maybe we should just be careful when buying our groceries and try not to over buy, that way we waste less πŸ™‚

23rd July 2019 – back on track… almost

Still feeling grumpy today, for no other reason than hormones, and my tummy hurts a lot, and i’m generally achy everywhere. thank goodness for tablets.

However, I resisted the chocolate covered flap jacks and stuck to my usual (sorry) daytime food. It’s amazing how unhungry I feel considering all I have during the day is a handful of nuts, a couple of eggs, fruit and salad. I shouldn’t be surprised really, it’s actually plenty of food, and nice and varied too, but before, in the unhealthy time zones, I would be ravenous by the time I would come home.

I have been taken my cathedral city mini cheddars as well, but actually I’m not eating them, because I deliberately think to myself “do I really need these?” And unsurprisingly the answer is no, happy days!

This evening I force fed my beloved loads of veggies, he’s still convinced he’s not on a healthy eating programme 🀣, and a pork chop. I didn’t cut off all the fat, I should have done, I know, but I did eat more slowly and stop when I knew I had eaten enough. So out of my dinner there was some chop and potato left, all veggies chomped!

I’m afraid there won’t be any exercising tonight, there will be a hot water bottle instead!

I’m currently watching a Steve bagshaw programme, stunning scenery. I love the outside, and we live in such a beautiful country, I can’t wait to be fit enough to start enjoying that beauty only a drive away.

Ok, so I managed to salvage yesterday I think, i finished the day with a nice bowl of fruit, so although i was feeling (very) stroppy, i certainly wasn’t hungry.

No I didn’t do my exercises, but that’s ok, I’ll get back on track with that as well, starting tonight.

So now I need to stop being miserable about what has been, and what can’t be changed, I can change all my tomorrows πŸ™‚

It did take some will power to walk past the charity box this morning, with all those lovely chocolate covered flap jacks. But I just need to keep reminding myself that I want to be a fitter and healthier me by the end of September. I CAN DO THIS!

22nd July 2019 – angry and upset

Why is it that sometimes people have to sabotage!

My partner goes shopping on Mondays while I visit with my mum. Our shopping list is on the Alexa app, which I update.

Having had a good day with my usual food, I was really looking forward to salmon with rice and veggies, hoping to finish my day on a high.

The smell of pizza filled my nose as soon as I walked in, why? I asked, it’s Monday was the response.

I am so ANGRY! We only buy for the week, so I couldn’t substitute.

I told him I’m not having half a pizza, he still put a third on my plate! I took off another slice.

I then stuck herbs on my plate, as I need the salads for my day food, or I’ll end up at the sandwich van!

I ate the herbs first to try and fill up before I had to touch the pizza, I then ate just the topping.. I say just, of course all that cheese isn’t exactly healthy, no matter how tasty.

I can not understand why he would do that. Now don’t get me wrong he is, usually, a most amazing and loving man, but right now I feel he’s done this because why should he suffer salmon and rice when he’s in this Monday pizza habit!

So angry, so upset.

Hopefully tomorrow will be better.
